  • 2 cups of fresh or frozen sweetcorn kernels

  • 1 small celery stalk, finely chopped (optional)
  • 4 cups of vegetable or chicken broth
  • 1-2 tablespoons of cooking oil (e.g., vegetable or olive oil)
  • 1/2 cup of heavy cream or coconut milk (for a dairy-free option)
  • Salt and pepper to taste
  • Chopped fresh herbs (e.g., parsley, chives) for garnish (optional)


  1. Prep the Ingredients:
    • If using fresh sweetcorn, remove the kernels from the cob. If using frozen sweetcorn, thaw it.
    • Chop the onion, garlic, carrot, and celery finely.
  2. Sauté the Aromatics:
    • Heat the cooking oil in a large pot over medium heat.
    • Add the chopped onion, garlic, carrot, and celery (if using). Sauté for a few minutes until the onion becomes translucent.
  3. Cook the Sweetcorn:

    • Stir in the heavy cream or coconut milk, which will add richness to the soup. You can adjust the amount to your taste, adding more for a creamier soup or less for a lighter version.
  8. Season and Serve:
    • Season the soup with salt and pepper to taste. Heat it gently, but do not bring it to a boil once the cream or coconut milk is added.
    • Ladle the sweetcorn soup into bowls. Garnish with chopped fresh herbs if desired.
